Healthy snack bars that taste like cookie dough? Count us in! These no-bake Cookie Dough Protein Bars are full of healthy fats, packed with protein and taste like cookie batter pinched right out of your Mum's mixing bowl.
Ingredients:
Brownie base layer
- 1/2 cup soft dates (soak in hot water for 10 minutes)
- 1 cup almond flour
- 1/4 cup Noode protein (we like Vanilla with this recipe)
- 2 tbsp cocoa powder
- 3 tbsp coconut oil
Cookie dough layer
- 1 can chickpeas drained and rinsed
- 1/2 cup nut butter
- 1 tbsp coconut oil
- 1/4 cup sweetener of choice
- 3 tbsp coconut flour
- 1 tsp of vanilla extract
- 1/2 cup vegan chocolate chips
- A pinch of salt
Chocolate top layer
- 1/2 cup melted vegan chocolate or 1/2 melted coconut oil mixed with 1/2 cocoa powder & 2 tablespoons sweetener
Method:
Mix the brownie base layer ingredients in a food processor until a dough has formed. Press into lined loaf pan and put in the fridge. Add all of the cookie dough ingredients except the chocolate chips into a food processor. Blend until combined, then mix in the chocolate chips with a spoon or spatula. Spread mixture over the brownie base layer, then place back in the fridge. Gently melt the chocolate and spread over the cookie dough layer. Place back into the fridge for at least 3 hours or overnight. Slice into bars and enjoy!
