Erica H's Peanut butter chocolate oatmeal cookies

"Thought I’d share a recipe I tried this morning - it was mega delish. Sugar free and great for breakfast "

 

1.5 c rolled oats

1 cup vanilla noode protein powder 

1/2 t baking Soda

1/2 baking powder 

1/2 C chopped dark chocolate/nuts/dried fruits (choice is yours!)

4 T melted coconut oil

2/3 C peanut butter 

2 medium eggs 

1/4/-1/2 C plant milk (depending on consistency) 

 

  1. PreHeat oven to 175 degrees Celsius 
  2. Mix all dry ingredients together 
  3. Add all wet ingredients minus plant milk 
  4. Mix using spatula or hands 
  5. Add little bit of plant milk at a time so that the mix can be rolled into a ball and pressed down into a cookie shape without falling apart 
  6. Put cookies on lined tray for 8mins then flip the tray and bake for another 8min 
  7. Cool on rack and enjoy!!

Great pea protein!

I love the vanilla bean protein! Great taste, mixes with oats well or even just with water for a shake. Sweetens things up without being sickly at all, not gritty either. I had been using NuZest for years but needed to switch and I tried all the pea proteins I could find! Noode was the best!
Also love the salted caramel. Great in bliss balls and baking etc. Not a fan of chocolate protein in general, but this one seemed ok?? Chocolate isn’t my thing though, so probably not a good judge there.
Definitely found my new go-to protein though :)

Vegan natural pea protein

Love this protein. Best tasting pea protein I have had.

Bit of a surprise with no sweetener at first but usually add banana or kiwi fruit to morning shake - and even a teaspoon of honey so all good - vanilla one too sweet .
